This morning as I started off for my morning jog something magical happened.
With my children still nestled in bed I walked out the door and headed
down farmer Diwan's dirt road.
Rising early and running down quiet farm roads makes my mind at peace.
I reflect on the beauty around me and gratitude for a healthy body.
As I breathed in deeply and felt the sun on my usually covered skin,
something was different.
The air had a crisp chill and the sun wasn't as harsh.
My favorite days of the year were upon me.
Fall was coming!
Immediately thoughts of Pumpkin Muffins, making jam, Apple Annie's Orchard,
planting bulbs, and our annual Halloween Bash danced in my head.
I hummed the theme song "This is Halloween" to Nightmare Before Christmas
while throwing together these delicious Pumpkin Muffins with chocolate chips
(because today was special) for breakfast.
Recipe:
4 eggs
2 cups sugar (maple syrup or honey)
16 oz. pumpkin puree
1 1/2 cup oil (or applesauce)
2 cups freshly ground flour (wheat, spelt, kamut...)
1 cup white flour
2 tsp. baking soda
2 tsp. baking powder
1 tsp. cinnamon
1 tsp. salt
1 cup chocolate chips
Mix wet ingredients with sugar. Then add dry ingredients. Stir just until moistened.
Fill muffin tins.
Bake at 400* for 16-18 minutes.
